Quick and easy cooking seems to be the most popular today in preparing a dish for the home.  Since most people are too busy at work the whole day, having dinner at home could be an exhausting job.  But with stir fried recipes at your side, you can quickly prepare dinner in no time at all.   Try this recipes at home for a quick dinner for the family.

  1. STIR FRIED GROUND BEEF AND VEGETABLES:Beef Stir Fry

Ingredients:

  • 1 pound ground beef
  • 1 tsp cornstarch
  • 1 clove garlic, minced
  • ½ tsp. paprika
  • 2 tbsp soy sauce
  • 2 tbsp oil
  • 8 oz. mushrooms, sliced
  • 2 tsp cornstarch
  • 2 tbsp soy sauce
  • 1 pepper, cut into 1 inch pieces
  • 2 stalks celery, sliced
  • 3 carrots, sliced thin
  • 3 scallions, sliced
  • ½ teaspoon salt
  • 1 cup chicken broth or water
  • 1/8 tsp pepper

HOW TO PREPARE:

  • Mix ground beef with cornstarch, garlic, soy sauce and paprika.  Allow to stand for 15 minutes.  Meanwhile, prepare vegetables.
  • Over medium heat, allow skillet to become very hot, add oil.  Add into skillet the pepper, celery, mushrooms, carrots, scallions, and salt.  Stir and turn for 3 minutes or until cooked but crisp.  Remove from skillet and set aside.
  • Put beef mixture into skillet and stir fry for 3 minutes until cooked.  Add the vegetables.  Mix cornstarch, broth, soy sauce, and pepper and add to skillet.  Cook until thickened, about 2 minutes.
  • Serves four persons. Serve hot.
  1. FRIED CABBAGE WITH BEEF AND RICE:

Ingredients:

  • 1 medium head of cabbage
  • 2 cups rice (not prepared)
  • 1 large onion, diced
  • 1 pound ground beef (ground chuck)
  • 2 cloves garlic, minced
  • ½ teaspoon pepper
  • 2 tbsp butter
  • Soy sauce to taste

HOW TO PREPARE:

  • Brown ground beef, garlic and onions in large skillet drain and set aside.
  • Prepare 2 cups rice in separate pan.  Cut cabbage into quarters and remove core, slice cabbage, place cabbage in skillet with butter and cook until done. Add all ingredients together heating until warm, add soy sauce to taste.
  • Served with rice, very hot.
  1. MONGOLIAN BEEF:

Ingredients:

  • 1 pound beef flank steak, sliced thin across the grain
  • MARINADE:
  • 1 TBSP LIGHT SOY SAUCE
  • 1 TBSP DRY SHERRY OR Chinese rice wine
  • ½ tsp freshly grated ginger
  • 4 cups peanut oil for deep frying.

FOR STIR FRYING:

  • 1 tbsp peanut oil
  • 2 cloves garlic, sliced thin
  • 4 green onions, sliced into 2 inch diagonal pieces
  • 1 teaspoon Hoisin sauce
  • Pinch of MSG, optional
  • ¼ tsp ground white pepper
  • Deep fried saifun or cellophane noodles

HOW TO PREPARE:

  • Marinate meat in soy, wine and ginger.  Mix well and let sit for 15 minutes. Drain meat well.  Separate meat into individual pieces.  In a wok or deep pan heat deep frying oil to 375 degrees.  Add meat all at once and stir a bit to separate.  Remove after 1 minute and allow meat to drain in a colander.  Remove oil from wok.
  • Heat wok again and add oil for stir frying.  Add garlic and green onions and stir fry for just a moment. Add Hoisin sauce, optional MSG and pepper.  Add meat.  Stir fry until hot.  Serve over deep fried saifun or cellophane noodles.  It is very dramatic.
  • Makes four servings as part of a Chinese meal.
